2 ways to roast your chicken - SUMMER EDITION

Here we'll explore two techniques that I use every week in the kitchen. 

METHOD #1: Charcoal BBQ

METHOD #2: Generously Herbed Chicken

METHOD #1: Charcoal BBQ

Summer recipes for roasting chicken must include BBQ so let' start with this one first. Barely no dishes nor prep time, sounds awesome!

I have a charcoal BBQ so that made it really easy to use. 
prep time: 10mins cook time: 1.5hours (depends on weight)

Ingredients:

1 Freerange Organic Chicken
1 Favourite Chicken Rub
1 TBS Olive Oil

① place charcoal on one half of the BBQ. I light it up with fire starter and let simmer until charcoal begin to turn white. Keep adding more charcoal every 30 mins. 

② rinse chicken and remove gizzards inside. Tap dry with a paper towel and throw out. Drizzle with olive oil and your favourite chicken rub. 

③ place chicken on the side without charcoals. Try not lifting the lid in the first hour to keep that chicken extra juicy.

④ after 1 hour of cooking, glaze chicken with BBQ sauce.

⑤ cover and cook until meat thermometer reaches 165 deg. Allow chicken to sit 20 minutes before cutting

 

METHOD #2: Generously Herbed Chicken

If you follow me on instagram you'll see that basil is quite the staple in my cooking. Not only for it's bounty in the summer heat but for it's medicinal properties as well. 

prep time: 15mins cook time: 1.5hours (depends on weight)

Ingredients:

1 Freerange Organic Chicken
2 Handfull of Fresh Basil
Handful of Fresh Thai Basil
1 Handfull of Fresh Sage
1 Handfull of Fresh Chives
1/2 cup Olive Oil
Optional lemon or lime fresh squeeze juice

 

① preheat oven to 375 deg.

② grab your herbs and chop chop chop!

③ grab a mixing bowl and fill with half the olive oil. Throw in the chopped herbs, top with salt and mix! Let sit 10mins for the flavours to soak in. 

④ rinse chicken and remove gizzards inside. Tap dry with a paper towel and throw out. 

⑤ grab a soup spoon and just lather the chicken with your herb mixture. You can even finish it up with a drizzle of lemon or lime juice.

⑥ place in middle of oven. Bake until meat thermometer reaches 165 deg. 

** PRO TIP for cooking chicken in an oven is to place a cookie sheet filled with water right underneath the chicken. The steam will go up on the chicken and make it super juicy. Keep filling it up like maybe 3 times during the baking process.2- 

Allow chicken to sit 20 minutes before cutting
